These Peanut Butter Protein No Bake Cookies are a quick and easy to make cookie, making it a feasible snack option during your crazy work week. These cookies only take about fifteen minutes to make, (minus the set up time) and are absolutely delicious!

Ingredients
  

  • 1/3 Cup Salted Butter
  • 1/2 Cup Unsweetened Peanut Butter
  • 3/4 Cup Vanilla Protein Powder
  • 1 Teaspoon Vanilla Extract
  • 3/4 Cup Sliced Raw Almonds
  • 1 Cup Unsweetened Shredded Coconut
  • 1/2 Cup Unsalted & Shelled Pumpkin Seeds

Instructions
 

  • Begin by laying a sheet of wax paper on a cookie sheet.
  • In a small saucepan over medium heat add your butter and peanut butter. Stir often with a spoon or spatula until both butters have melted and you have a smooth and creamy mixture.
  • Once the butters are melted, remove the pan from heat and add the protein powder, and sweetener. Mix until well combined
  • Add the vanilla, sliced almonds, coconut, and pumpkin seeds. Stir again until evenly incorporated.
  • Using a large spoon or a cookie scoop, drop heaping spoonfuls of the mixture onto the wax paper.
  • Place the tray of cookies in the refrigerator and let them chill for about an hour or until set. Once they have set serve and enjoy!
