12 Cavity Donut Pan
- 4 Large Eggs
- 1/4 Cup Plus 2 Tbsp. Water
- 1/4 Cup Heavy Whipping Cream
- 1 Tsp Vanilla Extract
- 1 1/2 Cups Blanched Almond Flour Blue Diamond is my favorite.
- 1/4 Cup Coconut Flour
- 1/2 Cup Erythritol Or sweetener of your choice
- 2 Tsp Baking Powder
- 1/8 Tsp Salt
For the Glaze
- 1/2 Cup Powdered Erythritol Sweetener Or your favorite powdered sweetener
- 1/4 Cup Heavy Whipping Cream
- 1 Tsp Vanilla Extract
- 1 Tsp Sugar Free Maple Syrup
Preheat the oven to 325 F and heavily grease one 12 cavity donut pan.
Crack the eggs into a blender and add your water, cream, and vanilla. Blend until combined well.
Add the almond flour, coconut flour, sweetener, and salt. Blend again until everything is well incorporated and the batter is smooth.
Spoon or pour the batter into the prepared pan, filling each cavity about two-thirds full. Bake for 18-24 minutes or until set and firm to the touch. Remove from the oven and let them cool completely before turning them out on a wire rack.
To Make the Glaze
While the donuts are cooling whisk together your sweetener, cream, vanilla, and syrup until smooth.
Dip the tops of each donut into the glaze and place on a wire rack until set.
