Why I  chose the low carb lifestyle

Welcome to Rocky Mountain Baking,

 My name is Katrina, and I’m happy you took a moment of your time to read a little bit about Rocky Mountain Baking. Baking has always been a passion of mine. I was that person, that person who loved to bake, loved bringing cookies and sweets to any function. A get together? Great! It was another reason to bake something! A job offer at a local bakery meant waking up at 3:30 to bake. I was up for it! Baking was one of the few things that could coax me to get out of bed that early in the morning, and be excited about it.

  Years passed, (sadly our local bakery went out of business) and I discovered another passion that inspired me to get out of bed early. Weight lifting. The challenge of another rep or five more pounds excited me, and I became obsessed with it. As I learned more about weight lifting I also began to learn what my body was capable of and how what I put in my body affected how my body worked. I began to venture into the world of the low carb/keto diet and was amazed as I began lifting heavier, running on less sleep, feeling more alert, and just feeling absolutely awesome. 

  With the switch came a whole new learning curve in the world of baking, and I am excited to be able to share my discoveries whether they be a success or a failure in this new baking journey. When I first decided to start Rocky Mountain Baking I was overwhelmed and was ready to give up. I realized I had so much to learn in the world of low carb baking, and felt so incapable of creating a website to help others with their journey. A wise man then told me “When you started weightlifting, you didn’t just deadlift 300 pounds your first try. Every day was not a success. It was that series of days, one rep at a time, that got you to where you are now.” 

 It made me realize yes, not every workout are you hitting a personal record. Some days feel like a failure, but if you keep on going failure or success one day you’ll be accomplishing goals you never thought possible. So as I journey into this new world of baking, I know not everything I try to make will be a success, but the failure is just as much a part of the process as the success. I hope that both can help you, as you also journey into the world of low carb baking, and together we can create a success we never thought possible.
