Hazelnut Cheddar Low Carb Crackers

Sometimes I find myself missing crackers. Missing having something savory and crunchy to snack on when the mood strikes.

While I have tried both homemade and store-bought parmesan crisps to help curb this craving, there are times I find myself wanting more.

Wanting something with a little more kick, something different…

As with anything in life, if you want something you have to put in the work to make it happen, and so I went to work on developing the cracker I wanted.

I began experimenting with a cheese and hazelnut flour-based cracker recipe, adding a little bit of this and a little bit of that. While the first batch tasted wonderful, it was a flop, as the crackers ran when baked and weren’t quite the right consistency. 

I made a second batch, and while that one didn’t run quite so bad, I baked them too long and they turned out very black…. 

(Yes… even those of us who have baked for years still wind up with inedible results on occasion)  

The third time was a charm, as I tweaked the recipe a little more and tried again. They had just the right amount of crunch this go around, and the flavor was perfection!

Savory notes of thyme, garlic, and red pepper paired wonderfully with cheddar cheese and the soft nutty flavor of hazelnuts. All these flavors combined helped create one of the best low carb crackers I have yet to taste. If you are looking for a savory low carb snack recipe, you will want to give this one a try. I think these hazelnut cheddar crackers just might be your new favorite!

Ingredient List

1 Cup  Shredded Cheddar Cheese

3/4 Cup Hazelnut Flour

1/3 Cup Egg White Protein Powder

1/2 Teaspoon Baking Powder

1/2 Teaspoon Himalayan Pink Salt

1/2 Teaspoon Paprika

1/2 Teaspoon Thyme Leaves

1 Teaspoon Red Pepper Flakes

1/2 Teaspoon Granulated Garlic

1 Large Egg White

1 1/2 Tablespoon Butter (melted)

 

How to Make Hazelnut Cheddar Low Carb Crackers

Preheat the oven to 425° Fahrenheit, and line a baking sheet with parchment paper.

In a medium mixing bowl add your hazelnut flour, cheddar cheese, baking powder, protein powder, and spices. 

Mix everything together with a fork or a whisk until evenly distributed.

Add the egg white and melted butter to the mixture and mix again until the dough comes together.

 

Roll the dough into a large ball and place on the baking sheet lined with parchment paper. Place another piece of parchment paper over the top of the dough, and roll the dough out as thinly as possible, until approximately a 1/4 inch thick.

 

After you have rolled the dough out, remove the top layer of parchment paper. Using a pizza cutter score the dough into approximately one and half-inch squares before baking.

Once you have them scored, place the crackers in your preheated oven and bake for 10-15 minutes or until the crackers have turned a golden brown.

(If the edges have begun to crisp, but the middle has not, cut or break off the edges and stick the pan back in the oven for another few minutes until all of your crackers have baked till crispy.)

Finish cutting the crackers out while warm, with a pizza cutter. Use oven mitts when doing this, and take care not to burn yourself on the hot pan! 

Once cut, let your crackers cool completely before serving for optimum flavor and texture!

Tip- If you don’t want your snacks disappearing at work, don’t share these crackers with anybody…. Even your most trusted friends may find themselves tempted to “sample” your crackers. 😉
